Description

Ajvar is a traditional Balkan pepper spread made from roasted red bell peppers and eggplants, blended with garlic, olive oil, and vinegar. This versatile condiment has a smoky, slightly sweet flavor with an optional spicy kick, perfect for serving with bread, grilled meats, or as a dip.

Ingredients

Scale

Vegetables

  • 6 large red bell peppers
  • 2 medium eggplants

Other Ingredients

  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon white vinegar
  • Salt, to taste
  • Optional: 1/4 teaspoon chili flakes for a spicy version

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the red bell peppers and eggplants on it.
  2. Roast Vegetables: Roast the peppers and eggplants for 30-40 minutes, turning them occasionally until the skins are charred and the vegetables are soft.
  3. Steam the Vegetables: Remove the roasted vegetables from the oven and cover them with plastic wrap or a lid to steam for 10-15 minutes. This softens them further and loosens the skins for easy removal.
  4. Peel and Deseed: Peel off the skins from the peppers and eggplants and remove the seeds thoroughly to avoid bitterness.
  5. Blend Ingredients: In a food processor, combine the peeled roasted vegetables, minced garlic, olive oil, vinegar, and salt. Blend until you achieve your desired texture, whether smooth or slightly chunky.
  6. Add Spice (Optional): If you prefer a spicy ajvar, add the chili flakes and blend briefly to incorporate.
  7. Store: Transfer the ajvar to a jar or serving dish. Store it in the refrigerator for up to a week or freeze for longer preservation.

Notes

  • Roasting with skin on is essential to get the smoky flavor and makes peeling easier after steaming.
  • Adjust the amount of garlic, olive oil, and vinegar to taste for a personalized flavor.
  • Use fresh, firm vegetables for the best result.
  • Ajvar tastes great chilled or at room temperature and pairs well with bread, grilled meats, cheeses, and vegetables.
  • Freezing ajvar in portions makes it easy to enjoy this spread anytime without waste.
