Description

These baked chicken tacos are a delicious and easy-to-make meal featuring seasoned shredded chicken, a blend of Colby-Jack and Pepper-Jack cheeses, and warm street taco corn tortillas. Perfectly baked for 15 minutes to melt the cheese and crisp the tortillas slightly, they are served with fresh salsa, diced tomatoes, guacamole, sour cream, and cilantro for a flavorful Mexican-inspired feast.

Ingredients

Scale

Chicken and Cheese

  • 1 lb. cooked, seasoned shredded chicken
  • 1 ½ cups freshly grated Colby-Jack cheese
  • 1 ½ cups freshly grated Pepper-Jack cheese

Tortillas

  • 20 street taco corn tortillas
  • Olive oil OR olive oil cooking spray

Toppings

  • Salsa (to taste)
  • Diced tomato (to taste)
  • Guacamole (to taste)
  • Sour cream (to taste)
  • Cilantro (for garnish)

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to ensure it reaches the perfect temperature for baking the tacos evenly.
  2. Prepare the Tortillas: Lightly brush or spray both sides of each street taco corn tortilla with olive oil to help them crisp during baking.
  3. Assemble the Tacos: On a baking sheet, lay out the tortillas. Evenly distribute the shredded seasoned chicken among them, then sprinkle a mixture of Colby-Jack and Pepper-Jack cheese over the chicken.
  4. Bake the Tacos: Place the baking sheet in the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly and the tortilla edges begin to crisp slightly.
  5. Add Fresh Toppings: Remove the tacos from the oven and top with salsa, diced tomatoes, guacamole, sour cream, and garnish with fresh cilantro as desired.

Notes

  • For extra crispy tortillas, bake a few minutes longer, but watch closely to prevent burning.
  • Use cooked chicken seasoned with your favorite spices such as cumin, chili powder, and garlic powder for enhanced flavor.
  • Feel free to substitute the cheese blend with your preferred varieties if desired.
  • If preferred, warm the tortillas separately before assembling for softer tacos.
  • This recipe is easily doubled or halved to suit your serving needs.
