Black Bean Filling

  • 1/4 teaspoon chili powder (optional)

Sandwich

  • 8 slices sandwich bread (whole wheat or white)
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 4 tablespoons butter, softened


Instructions

  1. Cook the onions: Heat olive oil in a skillet over medium heat. Add finely chopped onion and cook for 2 to 3 minutes until translucent, softening the onions and building flavor.
  2. Sauté garlic: Add minced garlic to the skillet and sauté for 30 seconds until fragrant, releasing its aroma into the mixture.
  3. Add and season black beans: Stir in the drained black beans along with ground cumin, smoked paprika, optional chili powder, salt, and black pepper. Cook for 2 to 3 minutes while gently mashing some beans with the back of the spoon to create a textured filling.
  4. Finish filling: Remove the skillet from heat and stir in chopped cilantro and lime juice to add freshness and a bright flavor. Set the filling aside.
  5. Prepare bread: Lay out the bread slices and spread a thin layer of softened butter on one side of each slice. Flip half of the slices so that the buttered sides face down on the surface.
  6. Assemble sandwiches: Evenly spread the black bean filling on the buttered side of the flipped slices, top with shredded cheese, then cover with the remaining bread slices, buttered side up.
