This easy and refreshing Blackberry Fool combines ripe blackberries with whipped cream and Greek yogurt for a light, creamy dessert. Naturally sweetened and very quick to prepare, it’s perfect for summer or any time you desire a simple yet elegant treat.

Instructions
- Whip the cream: In a mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract using an electric mixer or hand whisk until soft peaks form, about 2-3 minutes. This makes the cream fluffy and sweetened.
- Mash the blackberries: In a separate bowl, gently mash about two-thirds of the blackberries with a fork or potato masher, leaving some chunks for texture. Stir in the Greek yogurt to add creaminess and richness to the berry mixture.
- Fold the cream and berries: Gently fold the whipped cream into the mashed blackberry and yogurt mixture until just combined, preserving some fluffiness in the cream for a light texture.
- Assemble the fool: Spoon the blackberry cream mixture into serving glasses or bowls. Optionally, swirl the mixture with remaining whole blackberries to create color contrast and added texture.
- Serve and garnish: Garnish with extra fresh blackberries and mint sprigs if desired. You may also drizzle a little honey for extra sweetness. Serve immediately or refrigerate briefly to chill before serving.
