Description

  • 16 ounces mozzarella balls, ciliegine or pearls
  • 3 cups cherry tomatoes
  • 1/2 cup slivered fresh basil

Dressing

  • 1/3 cup extra virgin olive oil
  • 3 tablespoons white balsamic vinegar
  • 1 teaspoon kosher salt, plus more for salting the pasta water
  • 1 teaspoon freshly ground black pepper
  • 1 garlic clove, pressed or minced


Instructions

  1. Cook the Pasta: Bring a large pot of water to a boil and season generously with kosher salt. Add the pasta and cook just until al dente, about 8-10 minutes depending on pasta type. Drain the pasta in a colander and rinse lightly with cold water to stop cooking and cool the noodles. Set aside to fully cool.
  2. Prepare the Vegetables and Cheese: While the pasta cooks, drain the mozzarella balls and cut them in half. Slice the cherry tomatoes in half. In a large mixing bowl, combine the cooled pasta, mozzarella halves, cherry tomatoes, and slivered fresh basil, mixing gently to combine.
  3. Make the Dressing and Toss: In a small bowl or mason jar with a lid, combine the extra virgin olive oil, white balsamic vinegar, pressed or minced garlic, 1 teaspoon kosher salt, and freshly ground black pepper. Shake or whisk well until emulsified. Drizzle the dressing over the pasta mixture, toss gently to coat all ingredients evenly. Taste and adjust seasoning with additional salt or pepper if desired.
  4. Chill and Serve: For best flavor, refrigerate the salad for at least 30 minutes to allow the ingredients to meld together. Serve cold or at room temperature. The salad can be stored in the refrigerator in an airtight container for up to 3 days.
