Instructions
- Boil Pasta: In a large pot, bring salted water to a boil. Add pasta shells and cook according to package instructions until al dente, usually 8-10 minutes.
- Add Broccoli: With 2-3 minutes remaining on the pasta timer, add the chopped broccoli to the boiling water with the pasta. Cook until broccoli is vibrant green and tender.
- Drain Pasta and Broccoli: Drain the pasta and broccoli, reserving 1 cup of the pasta water for the sauce.
- Prepare Cheese Sauce: In the same pot, melt butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Simmer Half and Half: Stir in the half and half and bring to a gentle simmer over medium heat.
- Melt Cheese: Gradually whisk in the shredded cheddar cheese, stirring constantly until smooth. If sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.
- Combine Pasta and Sauce: Return the drained pasta and broccoli to the pot and toss gently to coat them evenly in the cheese sauce.
- Season and Serve: Season with salt and pepper to taste. Serve warm, optionally sprinkled with extra cheddar cheese.
