  • 1 pound chicken breast (cut into small cubes)
  • 1 small onion (diced)
  • 1 small red bell pepper (diced)
  • 1 (1-ounce) packet taco seasoning (or fajita seasoning)

Cheese & Tortillas

  • 2 cups shredded Monterey Jack cheese (or any cheese blend)
  • 4 large flour tortillas


Instructions

  1. Cook Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer and cook for approximately 2 minutes on each side until fully cooked through. Remove the chicken from the skillet and place on a plate.
  2. Sauté Vegetables: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the diced onion and red bell pepper, cooking for 2 to 3 minutes until they soften and become fragrant.
  3. Combine Chicken and Seasoning: Return the cooked chicken to the skillet with the sautéed vegetables. Sprinkle the taco seasoning over the mixture, stir thoroughly to combine all ingredients, and then set the skillet aside to keep warm.
  4. Assemble Quesadillas: Lay out the flour tortillas. Lightly brush one side of each tortilla with olive oil, then place them oil-side down on a clean surface. Evenly distribute one quarter of the chicken and vegetable mixture onto one half of each tortilla, followed by sprinkling ½ cup of shredded Monterey Jack cheese over the mixture. Fold the other half of the tortilla over to cover the fillings.
  5. Cook Quesadillas: Heat a nonstick pan over medium-low heat. Carefully place each folded quesadilla into the pan and cook for 3 to 4 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese inside has melted completely. Remove from heat and serve warm.
