Tender, seasoned chicken combined with sautéed onions and bell peppers is layered with melted Monterey Jack cheese inside warm flour tortillas, then crisped to golden perfection on the stovetop.

- 1 small onion (diced)

- 4 large flour tortillas
- 2 tablespoons olive oil (divided)
Instructions
- Cook the chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the cubed chicken in a single layer and cook for about 2 minutes on each side until cooked through and lightly browned. Remove the chicken to a plate and set aside.
- Sauté the vegetables: Add the remaining 1 tablespoon of olive oil to the same skillet. Add the diced onions and red bell peppers, cooking for 2-3 minutes until softened and fragrant.
- Combine chicken and seasoning: Return the cooked chicken to the skillet along with the taco seasoning. Stir well to combine the ingredients evenly, then remove from heat and set aside.
- Assemble quesadillas: Lay out the flour tortillas and brush one side of each with a little olive oil. Place the tortillas oil-side down on a clean surface. On one half of each tortilla, evenly spread ¼ of the chicken and vegetable mixture, followed by ½ cup of shredded cheese. Fold the tortillas over the filling to form a half-moon shape.
- Cook the quesadillas: Heat a nonstick pan over medium-low heat. Place each folded quesadilla onto the pan and cook for 3-4 minutes on each side until the tortillas are golden brown and the cheese inside is melted. Remove from heat and slice into wedges before serving.
