  2. Set up Double Boiler: Pour about 1 inch of water into a small pot and bring it to a simmer over medium-high heat.
  3. Melt Chocolate: Break the chocolate bar into pieces and place them in a heatproof glass bowl that fits snugly over the pot without touching the water. Reduce heat to low and place the bowl on top. Stir frequently as the chocolate melts until it is smooth and reaches a temperature of 88-90°F.
  4. Dip Strawberries: Remove the bowl from heat, but keep it over the pot to maintain warmth. Holding a strawberry by the stem, dip it into the melted chocolate, covering it completely. Gently shake off excess chocolate and place the strawberry onto a parchment-lined baking sheet. Optionally, garnish with toppings while the chocolate is still wet.
