Description

Decadent chocolate-covered strawberry brownies featuring a rich, fudgy brownie base topped with fresh strawberry halves and a smooth chocolate ganache. This easy-to-make dessert combines the classic taste of chocolate brownies with the freshness of strawberries for an elegant and indulgent treat.

Ingredients

Scale

Brownie

  • 7 ounces semisweet or bittersweet chocolate, chopped
  • 1/2 cup unsalted butter
  • 3 tablespoons unsweetened cocoa powder
  • 3 large eggs
  • 1 1/4 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 1 cup unbleached all-purpose flour
  • 1/2 teaspoon salt

Ganache and Topping

  • 4 ounces semisweet or bittersweet chocolate, chopped (for ganache)
  • 1/2 cup heavy cream
  • Fresh strawberries, halved (about 12 medium strawberries)

Instructions

  1. Melt Chocolate: Start by melting the chopped chocolate using a double boiler or microwave in 20-second intervals, stirring in between to prevent burning. Ensure the chocolate is smooth and completely melted.
  2. Add Cocoa Powder: Once melted, whisk in the unsweetened cocoa powder and set the mixture aside to cool slightly to avoid cooking the eggs later.
  3. Mix Eggs and Sugar: In a medium bowl, whisk the eggs, granulated sugar, vanilla extract, and salt for about 30 seconds until fully combined and slightly frothy.
  4. Combine Mixtures: Gradually whisk the warm chocolate mixture into the egg mixture to blend completely. Then, stir in the flour with a wooden spoon just until combined, being careful not to overmix to keep the brownies tender.
  5. Bake Brownies: Pour the brownie batter into an 8×8-inch pan lined with parchment paper. Bake in a preheated oven at 350°F (175°C) for about 30 minutes until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely in the pan.
  6. Prepare Ganache: For the ganache, melt the chopped chocolate and heavy cream together in a saucepan over low heat, stirring continuously until smooth. If needed, remove and return to heat briefly to fully melt the chocolate without burning.
  7. Assemble: Once the brownies have cooled, arrange the halved strawberries evenly on top of the brownies. Pour the warm ganache over the strawberries, covering them generously. Allow the ganache to set at room temperature or in the refrigerator before serving.

Notes

  • Be careful not to overbake the brownies to maintain a fudgy texture.
  • Use high-quality chocolate for the best flavor.
  • Allow brownies to cool completely before adding strawberries and ganache to prevent melting.
  • Ganache can be stored separately and poured just before serving if preferred.
  • For a glossy finish on ganache, stir gently and avoid overheating chocolate.
