Ingredients
Scale
Crust
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
Filling
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 large eggs
Topping
- 1 cup fresh raspberries
- 1/4 cup raspberry jam
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it reaches the correct temperature by the time the tart is ready for baking.
- Prepare Crust: In a bowl, combine the graham cracker crumbs with the melted butter. Mix thoroughly until the crumbs are evenly coated with butter. Press this mixture firmly and evenly into the bottom of a tart pan to form the crust.
- Make Filling: In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract together until the mixture is smooth and creamy. Add the eggs one at a time, beating well after each addition to ensure a consistent filling.
- Assemble & Bake: Pour the cream cheese filling over the prepared crust in the tart pan. Carefully drop fresh raspberries evenly on top of the filling. Bake in the preheated oven for 45 minutes or until the filling is set but still slightly jiggly in the center.
- Cool & Chill: Allow the tart to cool to room temperature after baking. Then, gently spread the raspberry jam over the top to achieve a shiny glaze. Refrigerate the tart for at least 4 hours to fully chill and set before serving.
Notes
- Make sure the cream cheese is softened to room temperature to avoid lumps in the filling.
- Press the crust mixture firmly and evenly to prevent it from crumbling after baking.
- If fresh raspberries are unavailable, frozen raspberries can be used; just thaw and drain excess liquid before use.
- Let the tart chill sufficiently in the refrigerator for the best texture and ease of slicing.
- For a more festive look, decorate with additional fresh raspberries or a dusting of powdered sugar before serving.
