Description

For the Summer Rolls

  • 10 rice paper wrappers
  • 1 cup carrots, julienned
  • 1 cup purple cabbage, shredded
  • 1 cup cooked rice noodles
  • 1/2 cup fresh cilantro
  • 1/2 cup fresh mint leaves
  • 1 tablespoon sesame seeds (optional)

For Frying and Serving

  • Neutral oil for frying (such as vegetable or canola oil)
  • Sweet chili sauce for dipping


Instructions

  1. Heat the oil: Pour a generous amount of neutral oil into a non-stick skillet and place it over medium heat. Let the oil heat until it shimmers, indicating it is hot enough for frying.
  2. Prepare the filling: In a mixing bowl, combine the julienned carrots, shredded purple cabbage, cooked rice noodles, fresh cilantro, fresh mint leaves, and optional sesame seeds. Toss gently to evenly distribute the ingredients.
  3. Assemble the rolls: Soak one rice paper wrapper in warm water for 5-10 seconds, just until pliable but not too soft. Lay it flat on a clean surface, then add a portion of the filling mixture onto the wrapper. Roll tightly to enclose the filling completely.
  4. Fry the rolls: Carefully place each rolled rice paper seam-side down into the hot oil. Fry the rolls for about 2-3 minutes on each side or until they turn golden brown and crispy. Remove from oil and drain on paper towels to remove excess oil.

Notes

  • Be careful not to soak the rice paper for too long, or they may become too soft and tear easily during rolling.
  • You can substitute or add other fresh herbs such as basil or Thai basil for more flavor variety.
  • Ensure the oil is hot enough before frying to avoid the rolls absorbing too much oil and becoming greasy.
  • Serve immediately for the best crispy texture. Leftover rolls can be reheated in an air fryer or oven for a few minutes.
