Description

A delicious and easy Crock Pot Beef and Broccoli recipe featuring tender slow-cooked beef with a savory soy-based sauce and fresh broccoli, all served over warm white rice. Perfect for a hassle-free weeknight dinner.

Ingredients

Scale

Beef and Sauce

  • 2 pounds sirloin steak or boneless beef chuck roast (sliced thin)
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 Tablespoon sesame oil
  • 3 garlic cloves (minced)

Thickening and Vegetables

  • 4 Tablespoons cornstarch
  • 4 Tablespoons water
  • 1 bag (12 ounces) frozen broccoli florets

To Serve

  • Cooked white rice (optional)

Instructions

  1. Prepare the Sauce: In the insert of a 6 quart crock pot (slow cooker), whisk together beef broth, low sodium soy sauce, brown sugar, sesame oil, and minced garlic until well combined.
  2. Cook the Beef: Place the thinly sliced beef into the crock pot with the sauce and toss to coat the meat evenly. Cover with the lid and cook on low heat for 5 hours to allow the beef to become tender and infused with flavor.
  3. Mix Cornstarch Slurry: When the beef is done, whisk together the cornstarch and water in a small bowl to create a slurry that will thicken the sauce.
  4. Add Broccoli and Thicken Sauce: Pour the cornstarch slurry into the crock pot and stir well to combine. Then add the frozen broccoli florets over the beef and sauce, gently stirring to incorporate. Cover with the lid and cook for an additional 30 minutes to cook the broccoli and thicken the sauce.
  5. Serve: Spoon the beef and broccoli mixture over warm cooked white rice if desired. Serve immediately and enjoy your hearty and flavorful meal.

Notes

  • Use low sodium soy sauce to control salt levels in the dish.
  • Slicing the beef thinly helps it cook faster and become tender during slow cooking.
  • Frozen broccoli works well and cooks perfectly in the crock pot during the final 30 minutes.
  • For a gluten-free version, ensure your soy sauce and other ingredients are certified gluten-free.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stove or microwave.
