Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and spray a muffin tin with cooking spray to prevent the egg bites from sticking.
- Prepare Egg Mixture: In a large bowl, whisk together the eggs, cottage cheese, shredded cheddar cheese, salt, and pepper until well combined and smooth.
- Add Bacon and Chives: Chop the cooked bacon into small pieces and finely chop the chives (if using). Gently fold them into the egg mixture to distribute evenly.
- Fill Muffin Tin: Pour the egg mixture evenly into the prepared muffin tin cups, filling each about three-quarters full to allow room for rising.
- Bake Egg Bites: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the egg bites are set and lightly golden on top. A toothpick inserted into the center should come out clean.
