- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
Salad Components
- 3 to 4 Romaine lettuce hearts, rinsed then chopped
- 1 cup black beans, rinsed
- 1 large tomato, chopped or 1 cup sliced cherry tomatoes
- 1/2 cup shredded cheddar cheese
Crunch & Dressing
- 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
- 1 cup Catalina dressing or your favorite salad dressing (ranch is a great alternative)
Optional
- Fresh cilantro (optional, for garnish)
Instructions
- Cook the ground beef: In a large skillet over medium-high heat, brown and crumble the lean ground beef. Once cooked through, drain any excess grease. Add the taco seasoning packet along with the amount of water specified on the seasoning packet. Stir the mixture and bring it to a boil. Reduce heat to low and let it simmer gently for 10 minutes to develop flavors. Remove from heat and allow the meat to cool slightly before assembling the salad.
- Assemble the salad base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled, seasoned ground beef to the bowl. Gently toss all ingredients together to distribute the flavors evenly. You may serve immediately or cover and chill the salad until ready to eat. Important: Do not add the Doritos chips yet as they will get soggy if added too early.
- Add chips and dressing before serving: When ready to serve, add the broken nacho cheese Doritos pieces to the salad bowl along with the Catalina or preferred dressing. Toss the entire salad gently to coat everything in the dressing and combine the crunchy chips just before serving to maintain their texture. Optionally, garnish with fresh cilantro for a burst of herbal flavor.
