- Heat the Skillet: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of unsalted butter. Allow the butter to melt completely, creating a rich base for cooking.
- Cook the Potatoes: Add the diced potatoes, minced garlic, dried rosemary, oregano, kosher salt, and ground black pepper to the skillet. Cook undisturbed for about 4 minutes to allow a golden crust to form. Then stir and continue cooking for another 3-4 minutes, or until the potatoes are fork tender. Once done, remove the potatoes from the skillet and set them aside in a bowl.
- Sear the Steak Bites: Return the skillet to the stove and increase the heat to high. Add the remaining 2 tablespoons of butter and stir until melted. Place the steak cubes in a single layer and cook for 1 minute without moving them. Flip or stir the steak and continue cooking for an additional 1-2 minutes, or until the steak reaches your preferred level of doneness. Remove the skillet from heat after cooking.
- Combine Potatoes and Steak: Return the cooked potatoes to the skillet with the steak bites. Toss everything together gently to combine the flavors. Adjust seasoning with additional salt and pepper if desired.
