Description

This Greek Chicken Gyros recipe features tender marinated chicken thighs grilled to perfection, served in warm pita bread with fresh vegetables and a creamy homemade tzatziki sauce. Perfect for a quick, flavorful Mediterranean-inspired meal that can be prepared in under an hour.

Ingredients

Scale

For the Chicken Marinade

  • 1 pound boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 2 teaspoons dried oregano
  • Salt and pepper to taste

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

For Assembly

  • 4 pita breads
  • 1 tomato, sliced
  • 1 red onion, thinly sliced
  • Fresh lettuce

Instructions

  1. Prepare the Marinade. In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the marinade base.
  2. Marinate the Chicken. Add the chicken thighs to the marinade and coat thoroughly. Cover and refrigerate for at least 1 hour, or overnight for enhanced flavor.
  3. Make the Tzatziki Sauce. In a separate bowl, mix Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, fresh dill, salt, and pepper until well combined.
  4. Chill the Sauce. Cover the tzatziki and refrigerate for at least 30 minutes to let the flavors meld.
  5. Heat the Cooking Surface. Preheat a grill or skillet over medium-high heat to prepare for cooking the chicken.
  6. Cook the Chicken. Remove chicken thighs from the marinade and grill or cook in the skillet for 6-7 minutes on each side until fully cooked with a slight char.
  7. Rest and Slice the Chicken. Allow the cooked chicken to rest for a few minutes, then slice it thinly for assembling the gyros.
  8. Warm the Pita Bread. Toast the pita breads on the grill or in a dry skillet for about 1 minute until soft and warm.
  9. Assemble the Gyros. Layer the sliced chicken onto each pita, then add tomato slices, red onion, and fresh lettuce.
  10. Add Tzatziki Sauce. Spoon a generous amount of chilled tzatziki sauce over the fillings.
  11. Serve. Fold or roll the pita around the fillings and serve immediately for the best flavor and texture.

Notes

  • For best flavor, marinate chicken overnight.
  • Drain grated cucumber well to avoid watery tzatziki sauce.
  • Use Greek yogurt for a thick and creamy tzatziki consistency.
  • Chicken thighs remain juicy and flavorful when grilled or pan-cooked.
  • Serve immediately once assembled to enjoy fresh textures.
