Ingredients
Scale
Main Ingredients
- 1 tablespoon olive oil
- 1 tablespoon minced garlic
- 1 small sweet onion, diced (about 1 cup)
- 1 pound ground turkey
- 2 large sweet potatoes, peeled and cubed
- 1 sweet bell pepper, chopped
- 2 teaspoons chili powder
- 1/4 cup Parmesan cheese
- 1 teaspoon dried parsley
- Salt & ground pepper to taste
Instructions
- Preheat and Sauté: Preheat your oven to 425°F. In a large cast-iron skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing with a wooden spoon until the onions soften and become translucent, releasing their sweet aroma.
- Brown the Turkey: Add the ground turkey to the skillet and cook until it is browned and no longer pink, breaking it up with your spoon as it cooks for an even texture.
- Add Vegetables and Spices: Stir in the chopped sweet bell pepper, cubed sweet potatoes, and chili powder. Mix everything well to evenly coat the ingredients with the spices.
- Bake the Hash: Place the cast-iron skillet in the preheated oven. Bake uncovered for 20 minutes or until the sweet potatoes are tender and cooked through, checking occasionally to ensure even cooking.
- Finish with Cheese and Herbs: Remove the skillet from the oven and sprinkle the Parmesan cheese, dried parsley, and additional chili powder over the top. Return to the oven just long enough to melt the cheese, then take it out and serve warm.
Notes
- If you don’t have a cast-iron skillet, a oven-safe skillet will work, but avoid any non-ovenproof pans.
- You can substitute ground turkey with ground chicken or lean ground beef if preferred.
- Adjust chili powder to your spice preference for a milder or more robust flavor.
- For extra freshness, garnish with chopped fresh parsley or cilantro before serving.
- To make this meal gluten-free, ensure your chili powder and Parmesan are certified gluten-free.
