Instructions
- Preheat and Prepare Potatoes: Preheat your oven to 425°F (220°C). Wash and thoroughly dry the potatoes to ensure crispiness. Place each potato between two wooden spoons or chopsticks to prevent slicing all the way through.
- Slice Potatoes Thinly: Using a sharp knife, carefully cut thin slices about 1/8 inch apart into each potato, slicing downwards but keeping the base intact. The wooden spoons will help keep the slices from cutting through completely.
- Make Butter Mixture: In a small bowl, combine melted unsalted butter, olive oil, minced garlic, salt, black pepper, and dried thyme or rosemary. Mix well to blend all flavors.
- Brush Potatoes with Butter Mixture: Line a baking sheet with parchment paper and place the sliced potatoes on it. Generously brush each potato with the butter mixture, making sure to get some between the slices for full flavor penetration.
- Bake Initially: Place the potatoes in the preheated oven and bake for 30 minutes. This allows them to start cooking and the edges to become tender.
