Chocolate Mixture

Instructions
- Melt the chocolate: Chop the dark chocolate and place it in a heatproof bowl. Add coconut oil to the bowl. Set the bowl over a double boiler with simmering water, stirring occasionally until the chocolate and coconut oil are completely melted and smooth.
- Remove from heat: Once fully melted, carefully remove the bowl from the double boiler to prevent overcooking.
- Add flavor and mix: Stir in the vanilla extract, then add the puffed quinoa and desiccated coconut. Mix thoroughly until all ingredients are evenly coated and combined.
- Shape the cookies: Using an ice cream scooper or spoon, scoop about 18-20 equal-sized mounds of the mixture onto a baking sheet lined with parchment paper.
- Chill to set: Place the baking sheet with the cookies in the fridge and chill for approximately 1 hour, or until the chocolate crisps have fully set and hardened.
