Description

This Hummus Veggie Sandwich is a fresh and flavorful vegetarian delight, perfect for a healthy lunch or snack. Made with whole grain bread, creamy red pepper hummus, crisp veggies, and a touch of zesty seasoning, it’s easy to prepare and packed with vibrant textures and colors.

Bread and Spreads

  • 8 slices whole grain bread
  • 8 tablespoons red pepper hummus (homemade or store bought)
  • 4 tablespoons mayonnaise (vegan mayo can be used to make the sandwich vegan)

Veggies and Toppings

  • 1 cup sprouts or microgreens
  • Pickled jalapenos and onions (can be left out if desired)
  • 4 large slices red leaf or green lettuce (washed and patted dry)
  • 1 medium cucumber, sliced
  • 1 large tomato, sliced
  • 1 tablespoon everything bagel seasoning or 1 teaspoon salt and 1 teaspoon pepper


Instructions

  1. Prepare Bread and Spreads: Lay out 8 slices of whole grain bread on a clean cutting board. Spread 2 tablespoons of red pepper hummus on 4 of the bread slices and 1 tablespoon of mayonnaise on each of the other 4 slices evenly.
  2. Add Sprouts and Pickled Veggies: On top of the slices spread with mayonnaise, layer a generous amount of sprouts or microgreens. On top of the slices spread with hummus, add pickled jalapenos and pickled red onions as desired.
  3. Layer Lettuce and Fresh Veggies: Place one large slice of red leaf or green lettuce on each slice, followed by evenly distributed cucumber and tomato slices. Sprinkle the tomato slices with everything bagel seasoning or alternatively with salt and pepper to taste.
  4. Assemble and Serve: Close the sandwiches by pairing hummus-covered bread slice with the mayo-covered one, press gently, and slice each sandwich in half. Serve immediately or wrap securely in brown paper or plastic wrap for later consumption. Store any leftovers tightly wrapped in the refrigerator.
