- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth, low sodium

- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt, or to taste

- 1 tablespoon apple cider vinegar
Instructions
- Brown the beef: Heat olive oil in a large pot over medium heat. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
- Sauté aromatics: Add the diced onion and minced garlic to the pot and sauté for 2-3 minutes until fragrant and softened.
- Cook vegetables: Stir in chopped cabbage, sliced carrot, and sliced celery. Cook for another 5 minutes, stirring occasionally to soften the vegetables.
