Description

These Mini Sweet Pepper Pizzas are a fun and easy appetizer or snack that combines the natural sweetness of mini peppers with classic pizza toppings. Perfectly bite-sized and quick to prepare, they’re baked until the peppers soften and the cheese melts, creating a delightful combination of flavors and textures.

Ingredients

Scale

Ingredients

  • 12 Pero Family Farms® mini sweet peppers, halved and seeded
  • ½ cup pizza sauce
  • ½ cup shredded mozzarella cheese
  • ¼ cup mini pepperoni slices

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper to prevent sticking and set it aside.
  2. Prepare Peppers: Arrange the halved and seeded mini sweet peppers cut side up on the prepared baking sheet. This creates the perfect base for your mini pizzas.
  3. Assemble Pizzas: Spoon about 1 teaspoon of pizza sauce into each pepper half. Then sprinkle 1 teaspoon of shredded mozzarella cheese over the sauce. Top with a few mini pepperoni slices per pepper.
  4. Bake: Place the baking sheet in the oven and bake for 8 to 10 minutes, or until the peppers have softened slightly and the cheese has melted and started to bubble.

Notes

  • If you prefer a spicier bite, add some red pepper flakes on top before baking.
  • For a vegetarian version, omit the pepperoni or substitute with sliced olives or mushrooms.
  • These mini pizzas are best served warm right out of the oven for optimal flavor and cheese texture.
  • Make sure to seed the peppers thoroughly to avoid any bitterness.
