Ingredients
- 12 Pero Family Farms® mini sweet peppers, halved and seeded
- ½ cup pizza sauce
- ½ cup shredded mozzarella cheese
- ¼ cup mini pepperoni slices
Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C). Line a baking sheet with parchment paper to prevent sticking and set it aside.
- Prepare Peppers: Arrange the halved and seeded mini sweet peppers cut side up on the prepared baking sheet. This creates the perfect base for your mini pizzas.
- Assemble Pizzas: Spoon about 1 teaspoon of pizza sauce into each pepper half. Then sprinkle 1 teaspoon of shredded mozzarella cheese over the sauce. Top with a few mini pepperoni slices per pepper.
- Bake: Place the baking sheet in the oven and bake for 8 to 10 minutes, or until the peppers have softened slightly and the cheese has melted and started to bubble.
Notes
- If you prefer a spicier bite, add some red pepper flakes on top before baking.
- For a vegetarian version, omit the pepperoni or substitute with sliced olives or mushrooms.
- These mini pizzas are best served warm right out of the oven for optimal flavor and cheese texture.
- Make sure to seed the peppers thoroughly to avoid any bitterness.
