Description

A vibrant and refreshing Pea and Burrata Salad featuring blanched peas, creamy burrata cheese, peppery arugula, fresh herbs, and toasted pine nuts, all tossed in a bright lemon-honey dressing. This Mediterranean-inspired salad is perfect for a light meal or a stunning side dish.

Ingredients

Scale

Salad Ingredients

  • 3 cups fresh or frozen peas, blanched and cooled
  • 2 balls burrata cheese (about 8 ounces total)
  • 2 cups arugula
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, torn
  • 1/4 cup toasted pine nuts
  • 1/4 cup thinly sliced red onion

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon honey
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Blanch the Peas: Bring a small pot of salted water to a boil. Add the peas and blanch them for about 2 minutes until they become bright green and tender. Drain the peas and immediately transfer them to a bowl of ice water to stop the cooking process. Once cooled, drain well.
  2. Prepare the Dressing: In a small bowl, whisk together the extra virgin olive oil, fresh lemon juice, lemon zest, honey, sea salt, and black pepper until well combined to create a flavorful dressing.
  3. Assemble the Salad: On a large serving platter, spread the arugula evenly as the base layer. Scatter the blanched peas, thinly sliced red onion, chopped mint, and torn basil leaves over the arugula.
  4. Add the Burrata: Tear the burrata cheese gently into pieces and place them evenly across the salad to maintain the creamy texture.
  5. Dress and Garnish: Drizzle the prepared lemon-honey dressing evenly over the top of the salad. Finish by sprinkling the toasted pine nuts and an extra pinch of black pepper over everything.
  6. Serve: Serve the salad immediately to enjoy the fresh flavors and vibrant textures at their best.

Notes

  • If fresh peas are available, they provide the sweetest and freshest flavor, but frozen peas work well when quickly blanched.
  • Toast the pine nuts in a dry skillet over medium heat for a few minutes until they are golden and fragrant to enhance their flavor.
  • This salad pairs wonderfully with grilled chicken, fish, or crusty bread for a complete meal.
