- Boil the mixture: Bring the mixture to a rolling boil and once it reaches this stage, continue boiling for exactly 1 minute without stirring to properly cook the sugar mixture.
- Remove from heat and add peanut butter and vanilla: Take the saucepan off the heat and quickly stir in the creamy peanut butter and vanilla extract until smooth and fully combined, creating a rich, uniform mixture.
- Incorporate the oats: Add the quick oats to the peanut butter mixture and stir thoroughly until all oats are evenly coated with the sticky blend.
- Form cookies: Drop spoonfuls of the mixture onto sheets lined with wax paper or parchment. Optionally, flatten the cookies slightly for an even shape.
