This Philly Cheesesteak Dip is a rich and creamy appetizer inspired by the classic Philly cheesesteak sandwich. It features tender chopped roast beef, sautéed onions and green bell peppers, and a blend of cream cheese, sour cream, mozzarella, and provolone cheeses baked to bubbly perfection. Perfect for parties and gatherings, it pairs beautifully with baguette slices, tortilla chips, or crisp veggies.

- 1 lb roast beef deli meat, sliced and chopped into ¼ inch pieces
- 1 medium onion, diced
- 1 large green bell pepper, chopped

- 8 ounces cream cheese (1 brick, 250 grams), room temperature
- ½ cup sour cream
- 1 cup mozzarella cheese, shredded
- 8 slices provolone cheese, chopped into ¼ inch pieces (or 1 cup shredded mozzarella or Swiss cheese)

- ½ tsp black pepper, or to taste
- Fresh parsley, finely chopped

Instructions
- Preheat and Prepare Dish: Preheat your oven to 375°F (190°C). Grease an oven-safe baking dish or skillet lightly with cooking spray and set it aside to prepare for baking the dip.
- Sauté Vegetables: In a large skillet over medium heat, melt 1 tablespoon of butter. Add the diced onion and sauté for 4 to 5 minutes until they are lightly caramelized. Then, add the chopped green bell pepper and cook for an additional 2 to 3 minutes, stirring occasionally, until the peppers become tender.
- Combine Cheese Mixture: While the vegetables cook, in a medium-sized bowl, combine the softened cream cheese, sour cream, shredded mozzarella cheese, and chopped provolone cheese. Stir well until all cheeses are evenly blended into a creamy mixture.
- Add Meat and Seasonings: To the cheese mixture, add the chopped roast beef deli meat, sautéed onions and peppers, salt, and black pepper. Mix thoroughly to incorporate all ingredients evenly. Optionally, reserve one tablespoon of the beef and vegetables for garnish.
- Assemble Dip: Spread the combined mixture evenly into your prepared baking dish or skillet. If you reserved any beef and vegetables, sprinkle them on top as a garnish to add extra texture and appearance.
- Bake the Dip: Cover the dish with aluminum foil and bake for 15 to 18 minutes until the dip is hot and bubbly. Then, remove the foil and bake uncovered for an additional 2 to 3 minutes to lightly brown the top.
- Garnish and Serve: Once baked, garnish the dip with freshly chopped parsley and sliced green onions. Serve it immediately with sliced baguette, tortilla chips, crackers, or fresh vegetables for dipping.
