Description

This Pork Chops and Rice Casserole is a comforting and easy-to-make one-dish meal featuring tender pork chops baked over a creamy, flavorful rice mixture infused with mushroom soup and savory seasonings. Perfect for a family dinner, it combines juicy meat and fluffy, seasoned rice in a convenient casserole.

Ingredients

Scale

Casserole Mixture

  • 1 can (10.5 ounces) condensed cream of mushroom soup, undiluted
  • 2 cups beef broth
  • 1 cup uncooked long-grain white rice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried chives
  • 1/4 teaspoon onion powder

Meat and Seasoning

  • 4 thick-cut pork chops (bone-in or boneless, per preference)
  • 1 packet (1 ounce) Lipton Onion Soup & Dip Mix or other seasoning blend

Instructions

  1. Preheat the Oven: Begin by preheating the oven to 350°F (175°C). Prepare a 9 x 13-inch baking dish by applying a light coating of cooking spray to prevent sticking.
  2. Prepare the Rice Mixture: In a large mixing bowl, combine the condensed cream of mushroom soup, beef broth, uncooked long-grain white rice, garlic powder, dried chives, and onion powder. Whisk until the mixture is smooth and thoroughly blended. Pour the mixture into the prepared baking dish, spreading it evenly across the bottom.
  3. Arrange the Pork Chops: Pat the pork chops dry with paper towels to ensure even cooking. Place them atop the rice mixture in the baking dish, spacing them evenly.
  4. Season the Pork Chops: Sprinkle the Lipton Onion Soup & Dip Mix (or alternative seasoning) evenly over the pork chops. For a milder onion flavor or reduced sodium, use half of the seasoning packet.
  5. First Bake: Cover the baking dish with aluminum foil to trap moisture, and place it in the preheated oven. Bake for approximately 30 minutes. Check the pork chops at this stage, ensuring they have reached an internal temperature of 145°F (63°C). If they are fully cooked, remove the pork chops from the baking dish, cover with foil, and set aside to rest.
  6. Finish Cooking the Rice: Stir the rice mixture to blend flavors. Re-cover the baking dish and return it to the oven. Continue baking for an additional 25-30 minutes, or until the rice is tender and most of the liquid has been absorbed.
  7. Serve and Garnish: Once the rice is cooked, fluff it gently with a fork. Serve it alongside the pork chops, garnishing with fresh parsley or basil as desired.

Notes

  • For a lower sodium dish, use half the onion soup mix or opt for a low-sodium version.
  • Bone-in pork chops tend to stay juicier during baking, but boneless works well too.
  • You can add fresh herbs such as parsley or basil as garnish for added color and flavor.
  • Make sure the pork chops reach an internal temperature of 145°F (63°C) for safe consumption.
  • Using a 9 x 13-inch baking dish is ideal for even cooking and adequate depth for the rice mixture.
