Instructions
- Prepare the Batter: Add the cottage cheese, rolled oats, eggs, and cinnamon (if using) to a blender.
- Blend until Smooth: Blend on high speed until the mixture is completely smooth and uniform.
- Heat the Pan: Warm a nonstick or cast iron skillet or griddle over medium heat. Add half of the butter and allow it to melt completely.
- Cook the Pancakes: Pour a small amount of batter into the pan, spreading it thinly. Cook for about 3 minutes per side, or until you see little bubbles forming and the top is mostly set before flipping to ensure they cook through thoroughly.
- Repeat and Serve: Melt the remaining butter, then cook the rest of the batter in the same manner. Serve the pancakes warm topped with your choice of berries, applesauce, maple syrup, or jam.
