Ingredients
Scale
Sweet Potatoes
- 2 ½ pounds red-skinned sweet potatoes
Seasoning & Oil
- 3 tablespoons olive oil
- 1 teaspoon cumin
- ½ teaspoon granulated garlic or garlic powder
- ½ teaspoon fine ground sea salt
- ¼ teaspoon cayenne pepper (or to taste)
- 1 tablespoon honey
Instructions
- Preheat and Prepare: Preheat the oven to 400 degrees F. Coat a large rimmed baking sheet with nonstick cooking spray to prevent sticking and ensure easy cleanup.
- Prepare Sweet Potatoes: Peel the sweet potatoes and cut them into 1-inch chunks. Place the chunks onto the prepared baking sheet. Drizzle olive oil over them and toss using a spatula or your hands to coat evenly. Sprinkle cumin, granulated garlic (or garlic powder), salt, and cayenne pepper over the sweet potatoes. Then drizzle honey evenly on top. Toss again to distribute all seasonings and honey thoroughly.
- Roast the Sweet Potatoes: Place the baking sheet in the preheated oven and roast for 15 minutes. After 15 minutes, toss the sweet potatoes with a spatula to ensure even cooking and browning. Continue roasting for an additional 15 to 20 minutes, tossing once or twice more, until the sweet potatoes are tender on the inside and beautifully browned on the edges.
Notes
- Red-skinned sweet potatoes are preferred for their sweetness and texture, but orange-fleshed sweet potatoes can also be used.
- Adjust cayenne pepper to your spice preference or omit for a milder flavor.
- Honey enhances caramelization but can be replaced with maple syrup for a vegan option.
- Roasting times may vary depending on your oven and the size of the sweet potato chunks; check for tenderness with a fork.
- Make sure to toss sweet potatoes during roasting to get even browning and cooking.
