Description

A quick and flavorful sautéed green beans and mushrooms recipe featuring tender-crisp green beans and golden cremini mushrooms cooked in olive oil, butter, garlic, soy sauce, and balsamic vinegar. Perfect as a healthy side dish to complement any meal.

Ingredients

Scale

Vegetables

  • 1 pound green beans, trimmed
  • 8 ounces cremini mushrooms, pat dry and sliced
  • 3 cloves garlic, finely chopped

Oils and Fats

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon butter

Seasonings

  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 teaspoon soy sauce
  • ½ teaspoon balsamic vinegar

Instructions

  1. Blanch the Green Beans: In a medium pot, bring 5 cups of water to a boil over medium-high heat. Add the green beans and blanch them for 2-3 minutes until crisp-tender and bright green. Drain immediately and rinse under cold water to stop the cooking process. Set aside.
  2. Sauté the Mushrooms: In a large skillet, heat olive oil and butter over medium-high heat until the butter starts to bubble, about 1 minute. Add the mushrooms, salt, and pepper. Cook without stirring for 2-3 minutes to allow browning, then stir and continue cooking for another 2-3 minutes until the mushrooms are golden and tender.
  3. Add Garlic: Stir in the chopped garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Combine and Finish Cooking: Add the blanched green beans, soy sauce, and balsamic vinegar to the skillet. Toss well to combine and cook for another 2-3 minutes until heated through and evenly coated in the sauce.
  5. Serve: Transfer the sautéed green beans and mushrooms to a serving dish and serve immediately while warm for the best flavor and texture.

Notes

  • Blanching the green beans before sautéing helps them maintain their vibrant color and crisp texture.
  • Drying the mushrooms thoroughly is key to achieving good browning and flavor.
  • If soy sauce is unavailable, tamari or coconut aminos can be used as alternatives for a similar umami flavor.
  • Adjust garlic quantity according to taste preferences.
  • This dish pairs well with grilled meats, fish, or as part of a vegetarian meal.
