Description

Traditional Northern Irish Pasties are a beloved chip shop treat featuring a savory filling of ground beef and mashed potatoes seasoned with white pepper, coated in a light batter, and deep-fried to crispy perfection. Unlike Cornish pasties, these are not baked but dipped in batter and fried, creating a unique, flavorful snack with a crispy golden crust that is perfect served alongside chips, salt, and vinegar.

Ingredients

Scale

For the filling:

  • 2 cups mashed potatoes (cooled)
  • ½ lb ground beef
  • ½ small onion (finely chopped)
  • 1 tbsp butter or oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp white pepper (traditional flavor)

For the batter:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup cold water (approx.)

For frying:

  • Vegetable oil (for deep frying)

Instructions

  1. Cook the filling: In a pan, sauté the finely chopped onion in butter or oil until soft and translucent. Add the ground beef and cook until browned, breaking it up with a spoon. Season with salt, black pepper, and white pepper, then let the mixture cool slightly. Once cooled, mix in the mashed potatoes until the mixture is firm enough to shape.
  2. Shape the pasties: Form the filling mixture into flat oval patties approximately the size of a burger. Place the patties in the refrigerator to chill for 20–30 minutes; this helps them hold their shape during frying.
  3. Make the batter: In a bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add cold water, whisking constantly, until you achieve a smooth batter with the consistency of pancake batter.
  4. Fry the pasties: Heat vegetable oil in a deep fryer or deep pan to 350°F (175°C). Dip each chilled patty completely into the batter, making sure it is fully coated. Carefully lower the battered patty into the hot oil and fry for 4–5 minutes or until the batter is golden brown and crispy. Remove and drain on paper towels.
  5. Serve: Serve the traditional Northern Irish pasties hot, ideally accompanied by chips (fries), sprinkled with salt, and a dash of vinegar. For extra comfort, serve alongside brown sauce or gravy.

Notes

  • Add a pinch of curry powder to the filling for a flavorful twist, as some chip shops do.
  • Substitute ground beef with sausage meat for a richer taste.
  • You can make the pasties ahead of time and reheat them in the oven to preserve crispiness.
  • Traditionally served with chips, salt, and vinegar for the authentic chip shop experience.
