Ingredients
Scale
Main Ingredients
- 3 tablespoons butter
- 10 ounces marshmallows (about 5 cups, use regular or mini)
- 6 cups Rice Krispies cereal
- 1 teaspoon peppermint extract
Topping Ingredients
- 1 cup white chocolate chips
- 1 cup crushed peppermint candies (or candy canes)
Instructions
- Prepare Your Pan: Lightly grease a 9×13-inch baking dish with butter or line it with parchment paper to prevent sticking and make removal easier.
- Melt Butter and Marshmallows: In a large saucepan over medium-low heat, melt 3 tablespoons of butter. Once fully melted, add 10 ounces of marshmallows and continuously stir until the mixture is smooth and fully melted.
- Add Peppermint Extract: Remove the saucepan from heat and stir in 1 teaspoon of peppermint extract to infuse the mixture with a refreshing mint flavor.
- Incorporate Rice Krispies Cereal: Gradually add 6 cups of Rice Krispies cereal into the marshmallow mixture, stirring gently but thoroughly to coat every piece evenly without crushing them.
- Press Into the Pan: Transfer the coated cereal mixture into the prepared pan. Use a buttered spatula or wax paper to press the mixture firmly and evenly into the pan’s surface.
- Melt White Chocolate and Add Toppings: In a microwave-safe bowl, melt 1 cup of white chocolate chips by heating in 30-second intervals, stirring after each, until smooth. Drizzle or spread the melted white chocolate evenly over the pressed cereal layer, then immediately sprinkle 1 cup of crushed peppermint candies on top before the chocolate sets.
- Chill and Set: Place the pan in the refrigerator for at least 30 minutes to allow the white chocolate to harden completely. Once set, cut into squares or rectangles and serve.
Notes
- Use either regular or mini marshmallows based on your preference; mini marshmallows may melt faster.
- Make sure to stir the marshmallow mixture constantly to prevent burning.
- Crush peppermint candies coarsely for best texture contrast and visual appeal.
- Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- For a dairy-free version, substitute butter with coconut oil and use dairy-free white chocolate chips.
